In our travels we meet people who are as passionate about good food production as we are! Rick Stein whose journeys have discovered untold treasures to delight the palate! Jimmy Doherty of the Essex Pig Company made famous by the television programme "Jim's Farm" on British television. Jamie Oliver is another one of those cooks whose infectious love of real food has been an encouragement to producers and his campaign to introduce schoolgoers to the attractiveness of "pukka" food will go in no small way to giving them healthier lives. Thane Prince is passionate about food and believes that cooking can and should be enjoyable. Her philosophy is that you should take beautiful ingredients, cook them simply, then sit down and share the meal with friends. Thane's recipe Watercress Pancakes with Wild Connemara Smoked Salmon Jean-Christophe Novelli has been described as having the ability to make women "Swoon at the flick of his whisk!" and Harpers & Queen in 1999 described Jean Christophe as the "5th most alluring man in the worldÓ, Pierre Perret is a famous French singer and gourmet is a regular visitor to the smokehouse to have fishes he catches in the Corrib smoked. We recently featuresd in a documentary about his holidays in Ireland. Rachel Allen is a Dubliner who left home at eighteen to study at the world-famous Ballymaloe Cookery School. Rachel is now a busy TV chef, author, journalist and mother, and still teaches at Ballymaloe. Clodagh McKenna also trained at Ballymaloe Cookery School, worked as a chef in Ballymaloe House for 3 years before setting up her own stall at a local market as well as developing other farmers markets around Ireland. She has her own weekly column for the Irish Examiner, fortnightly column for The Mail on Sunday, and a monthly column for Food and Wine Magazine.
