Connemara Smoked Salmon on Scallion Pancakes

Scallion Pancake SS sour cream

Simple, Light & fluffy.  Perfect Smoked Salmon & Scallion savoury pancakes for breakfast, brunch, Pancake Tuesday or just for that weekend treat…

Serves 2+



1 cup self-raising flour

1 cup Milk

1 Egg

2/3 diced scallion (Leave a little a side for garnish)



I tub of Créme Sour Cream

200g Connemara Smokehouse Smoked Salmon

1 Lemon rind



Pre-head a large non-stick frying pan.

Place all ingredients (flour, milk, egg, scallion leaving a little a side) into a bowl & mix.

Lightly grease the pan with butter or oil.

Cook large spoonfuls of batter until bubbles burst on the surface.

Flip and cook other side until golden brown.

Serve on a warm plate with a dollop of sour cream sprinkled with diced scallion & grated lemon rind.
