Connemara goes to Washington
Graham Roberts of the Connemara Smokehouse is back from a whirlwind trip to Washington D.C. The Culinary feast focuses on the West of Ireland’s relatively new status as a culinary destination. Graham was representing Tourism Ireland and Good Food Ireland at the Irish Embassy in Washington.

Smoked Salmon Dip
2 cups crumbled Connemara Smokehouse smoked salmon, 1 cup sour cream, Garlic salt to taste, Dill to taste, Chips, crackers, or flatbread.
Potato rosti with smoked salmon, creme fraiche red onions and rocket leaves
This is a great dish for a lunch or dinner party… you are essentially making one large potato rosti which is a potato cake made from sliced or grated potato.
