Each step in our all-natural traditional process is meticulously executed to craft elegant smoked salmon, mackerel, tuna, trout and herrings which are bursting with flavour.
Our methods have been handed down for generations to ensure that the smoked fish on your plate is of the finest quality, retaining all of its authentic essence, natural taste and original colour.
Only when a fish has reached the ideal weight for smoking, is it harvested from the sea, rapidly cooled, gutted, cleaned, hand-filleted and boned.
The entire process is carefully completed by hand in our Connemara Smokehouse.
