3oz Rolled Oats (leave a sprinkle for top of loaf)
260g Whole Wheat Flour
100g Brown Sugar
2 tsp Baking Soda
1 tsp Baking Powder
½ tsp Salt
115g melted Butter
2 tsp Vanilla
8 fl oz Milk
1 tsp Vinegar
12 fl oz Guinness
Preheat oven to 220ºC
Grease a loaf tin.
Combine milk and vinegar and set aside for 10 minutes.
Mix oats (keep a sprinkle for topping), flour, sugar, baking soda, baking powder, and salt.
In another bowl, stir together the butter, vanilla, milk mixture and Guinness.
Add dry mixture into the liquid mixture, and stir until blended.
Pour mixture into the prepared loaf tin.
Sprinkle top with remaining oats.
Bake 30 minutes, then reduce temperature to 200ºC and bake for additional 20 minutes.
Allow to cool in pan for 30 minutes before moving to a wire rack.
SMOKED SALMON on Guinness bread: Serves 10-12
1 Guinness Loaf
500g Connemara Smokehouse Irish Wild Smoked Salmon
200g Chive Cream Cheese
1 lemon, fresh dill or chives to garnish
Cut thick slices of Guinness bread, spread with chive cream cheese. Place a slice of Connemara wild smoked salmon on top. Garnish with a thin slice of lemon and with a sprig of dill or fresh chives.
